pasta with grilled vegetables
I found this Weight Watchers recipe in one of my folders stuffed with various recipes and decided to give it a try -- it's definitely a keeper, and I've already repeated it. The only trouble for you WW followers out there: the # of Points was strangely omitted.
10 oz. short pasta (I used whole wheat penne -- Target makes ww pasta that is both inexpensive and tasty)
2 bell peppers (I used yellow and orange), cut in large chunks
1-2 c. cherry tomatoes, halved
1 bunch asparagus, cut into 1" pieces
3 t. crumbled blue cheese (I used 3 tablespoons!)
1/4 c. white wine vinegar
1 t. sugar
1/2 t. minced garlic
salt and pepper to taste
The recipe calls for grilling the vegetables, but since we still have snow, I just sautéed them in a little olive oil. Either way, cook the peppers and asparagus while the pasta is cooking.
In a medium bowl, mix the vinegar, garlic, sugar, salt, pepper, blue cheese, and tomatoes. Add the drained pasta and the cooked vegetables and mix well. Add a little of the pasta cooking water if necessary.
Fast, easy, good. Enjoy!

That looks delish! Its amazing how much better wheat pasta is now than when it started being mainstreamed like 8 years ago. It was all chewey and gummy, now the consistency is good and its all we eat.
Sometimes I will toss the veggies in the olive oil and put them on a foil liked cookie sheet (or do you have a silpat pan liner?) and put them under the broiler in the oven for about 4 mintes, stir them around and do it for a couple more minutes. They get that broiled flavor in no time. Just be careful not to burn them!
I think I'll make that tomorrow, I have all those ingredients!

We just had grilled vegetable pizza tonight with some leftover grilled veggies, I'll have to try this recipe next time.

Wow...even from the picture this looks fantastic. Now, if only I could *actually* get myself to cook more....I would love to make this!
